Permits are in place and construction on a new coffee house in north Beatrice may start this month.

The city issued a building permit to Kieffer Coffee LLC in March for the building at Indian Creek Mall, valued at $156,700.

Katie Kieffer, who will run the Scooter’s Coffee franchise in Beatrice, is excited for construction to start.

“We’re waiting for local bids to come back and for the city to get our plotting on the GIS map,” she said. “There are a couple things left to do. We’re hoping to start construction at the end of this month. I cannot wait for it to start.”

While the process has taken longer than expected, Kieffer said she hopes the coffee shop is serving customers by late summer or early fall.

Plans to launch a Scooter’s in Beatrice were announced last October.

The coffee shop will share a parking lot with Risky’s Bar and Grill and Ace Hardware at the north end of Beatrice next to Highway 77.

Kieffer is currently a manager at one of the Scooter's locations in Lincoln and will own and operate the store in Beatrice. The Scooter’s store will be a walk-in building with a drive-thru window.

In March, the Beatrice City Council vacated and replatted the lot where Scooter’s will be built into two smaller lots for the location.

At the same time, a proposed median to divide the lanes of Industrial Row has raised concerns of potentially hindering traffic into the area.

Kieffer said despite having more hoops to jump through than she anticipated, plans to open a Scooter’s in Beatrice were never derailed.

“I haven’t been discouraged or stopped thinking of having a shop in Beatrice,” she said. “It’s never not been on the table. We’re very, very excited to come to Beatrice, whatever we have to go through to get it.”

The family was announced as a new Nebraska franchisee with Scooter’s Coffee last August.

Scooter’s Coffee is originally based out of Omaha, and has been serving coffee for around 17 years.

When in operation, the Beatrice location is expected to employ 10-12 people.
