Cynthia R. “Cindy” McCarthy, 61, of Beatrice died Saturday afternoon, July 13, 2019 at Nebraska Medicine in Omaha. She was born on October 7, 1957 at Beatrice and graduated from Beatrice High School in 1975. She was an excellent cook and was known for her delicious bon-bons and pumpkin bars. She operated Cindy's Deli before cooking at BSDC, Beatrice Manor, and the Beatrice Senior Center. She was a member of St. John Lutheran Church of Beatrice and was on the Beatrice Speedway Hall of Fame committee. She thoroughly enjoyed car racing, baking, making homemade jelly, and crocheting. She loved her family, especially her two grandsons.

Survivors include her daughter, Brandi McCarthy and long-time partner Jordan Bender of Beatrice; two grandsons, Kendrick and Keagun Bender; her mother, Barbara VanLaningham of Beatrice; sister, Diane (Jim) Jurgens of Beatrice; sister-in-law, Sue VanLaningham of Beatrice; two nephews, Kevin (Debra) VanLaningham and Justin (Whitney) Jurgens; niece, Ashlea (Daniel) Jurgens-Woitzel; three great-nephews, Tobey and Brady VanLaningham and Henry Jurgens; two great-nieces, Lauren and Lainey Woitzel; aunts, uncles, and cousins. She was preceded in death by her father, Kenneth “Tobe” VanLaningham and brother, Keith VanLaningham.

Funeral services will be held at 10:30 A.M. on Wednesday, July 17, 2019 at Fox Funeral Home with Sharon Schuster officiating. Burial will be at the Evergreen Home Cemetery of Beatrice. A memorial has been established to the family's choice. The body will lie in state at the Fox Funeral Home on Tuesday from 8:00 A.M. until 8:00 P.M. and then one hour preceding the service on Wednesday. Racing or casual attire is requested. Fox Funeral Home of Beatrice is in charge of the arrangements.
