Bang Bang Pork

Yields 6 servings

Cooking Time: 25 minutes

Ingredients:

2 lb. pork loin, cut into 1-inch cubes
⅔ cup unsweetened almond milk
2 large eggs
¾ cup rice flour
½ cup potato starch
¼ cup peanut oil or coconut oil
Salt and pepper to taste
1 tsp. Mexican oregano
1 tsp. garlic powder
1 tsp. onion powder
3 cups breadcrumbs of your choice
1 tsp. smoked paprika
1 avocado

Sauce ingredients:

½ cup Greek yogurt
2 tbsp. hot sauce
1 tbsp. honey
2 tbsp. sweet chili sauce

White Rice / Arroz Blanco ingredients:

½ medium onion
1 clove garlic
2½ cups chicken broth or water
2 tbsp. vegetable oil
1 cup long grain rice

| Preparation | In a large bowl, pour flour, potato starch, onion powder, garlic powder, salt and pepper. Mix them until well combined.

Add the eggs and milk, whisking until smooth to create a batter. Coat the pork pieces with the batter and set aside to marinate for 8 minutes.

In the meantime, for the rice, puree onion, garlic, and chicken broth in a blender until smooth.

Heat vegetable oil in a medium skillet or saucepan over medium heat. Add rice and fry in oil to slightly cook it without turning it brown.

Carefully pour in the chicken broth with puree and season with salt. Let rice come to a boil, stir, and cover the skillet. Do not stir after this point.

Reduce heat to a very low heat and simmer until no liquid remains. Remove from heat and let set aside.

Coming back to your pork, set the air fryer to 400°F.

Place the breadcrumbs, paprika, Mexican oregano, and oil in a bowl to mix well, then add the pork pieces to bread the pork well.

Place the breaded pork pieces into the air fryer basket and spread them so they cook evenly.

Cook the pork to a minimum internal temperature of 145° to 160° F with 3 minutes rest.

Bang Bang sauce directions:

Mix the Greek yogurt, hot sauce, honey, and sweet chili sauce together in a medium bowl and set aside in the fridge for 10 minutes.

Transfer the cooked pork to a serving bowl and drizzle with the sauce. Serve your pork over your arroz blanco, fresh slices of avocado, and enjoy.

Additional Ways to Eat: Serve in lettuce wraps. Scoop into lettuce cups and top with additional sauce, if desired.

Cerdo Bang Bang con Arroz Blanco

Ingredients:

2 libras de lomo de cerdo, cortado en trozos de 1 pulgada
⅔ taza de leche de almendras sin azúcar
2 huevos grande
¾ taza de harina de arroz
½ taza de almidón de papa
¼ taza de aceite de maní o aceite de coco
Sal y pimienta al gusto
1 cdta. de orégano mexicano
1 cdta. de ajo en polvo
1 cdta. de cebolla en polvo
3 tazas de pan rallado, de tu preferencia
1 cdta. de pimentón ahumado
1 aguacate

Para la salsa:

½ taza de yogur griego
2 cdas. de salsa picante
1 cda. de miel
2 cdas. de salsa de chile dulce

Para el arroz blanco:

½ cebolla mediana
1 diente de ajo
2½ tazas de caldo de pollo o agua
2 cdas. de aceite vegetal
1 taza de arroz de grano largo

| Preparación | En un recipiente grande, vierte la harina, el almidón de papa, la cebolla en polvo, el ajo en polvo, la sal y pimienta. Mézclalos hasta que estén bien combinados.

Agrega los huevos y la leche, batiendo hasta que quede suave para crear una masa. Cubre los trozos de cerdo con la masa y déjalos marinar durante 8 minutos.

Mientras tanto, para el arroz, haz un puré con la cebolla, el ajo y el caldo de pollo en una licuadora hasta que quede suave.

Calienta el aceite vegetal en una sartén o cacerola mediana a fuego medio. Agrega el arroz y sofríe en el aceite para que se cocine ligeramente sin que se dore.

Vierte con cuidado el caldo de pollo con el puré y sazona con sal. Deja que el arroz hierva, revuelve y tapa la sartén. No lo revuelvas más desde este paso en adelante.

Reduce el fuego a un calor muy bajo y deja cocinar a fuego lento hasta que no quede líquido. Retíralo del fuego y reserva a un lado para que repose.

Volviendo al cerdo, configura la freidora de aire a 400 °F.

Coloca el pan rallado, el pimentón, el orégano mexicano y el aceite en un recipiente para mezclar bien, luego agrega los trozos de cerdo para empanizar bien la carne.

Coloca los trozos de cerdo empanizados en la cesta de la freidora de aire y distribúyelos para que se cocinen uniformemente.

Cocina el cerdo a una temperatura interna mínima de entre 145° a 160° F con 3 minutos de reposo.

Para la salsa Bang Bang:

Mezcla el yogur griego, la salsa picante, la miel y la salsa de chile dulce en un recipiente mediano y reserva aparte en el refrigerador durante 10 minutos.

Transfiere el cerdo cocido a un recipiente para servir y rocíalo con la salsa. Sirve tu cerdo por encima del arroz blanco, rebanadas del aguacate fresco, y buen provecho.

Otras maneras de comer este plato: Sírvelo en rollitos (wraps) de lechuga. Sirve una cucharada en la parte ondulada de las hojas de lechuga y agrega salsa adicional por encima, si lo deseas.
